Assamese Cuisine

Traditional foods and Dishes of Assam are  traditionally passes from generations to generation which has a historic precedent  in local cuisine .Simple locally made spicy species yet it boost  of complex and unique flavour that are sure to tantalize everyones taste buds .Along with delicious foods and dishes assam has a rich culture.

Ghila  Pitha: 

A typical food prepared from Bora Chaul(Rice) by grinding it abd mixing with water and then frying in oil. Ghila Pitha is so called because of its knee-cap sized shapes.Knee cap called Ghila in Assamese. 

Till Pitha:

The most special one made from bora rice  a special kind of glutinous rice,or xaali saul,or dried rice called Till pitha which is made with sesame seeds with grinded rice flour.It is famous all over assam.

Tekeli Pitha:

Tekeli pitha made with sesame,mixed with sugar and rice flour in a Tekeli filled with water.   All these are usually made on a special festival of Assam known as Bihu which is the main festival of Assam, Assamese.

Narikol laddu:

Traditional sweet balls made  with sugar and coconut and various kinds of nuts and rasins  are also added for a crunch .It  is popular among Assamese a perfect accompaniment to cup of hot beverage.These laddus are naturally gluten free  and can be made vegan.

Tilor  laddu :

Sesame seeds rich in vitamin  D  roasted with jaggery  made like round ball   a tasty sweet snack served with tea.These sweet balls rich in iron and calcium ,taste delicious  with a nutty aroma .These are also offered to the deities during festivals  as naivedyam.

Sel roti: 

Sel roti is a traditional Nepalese  (a tribe of Assamese ) ring shaped sweet fried dough made from rice flour ,which is then deep fried in cooking oil.Locally it is known as Mala roti or Nepali roti.

 Dishes of Assam is unbeatable whole over the world .Spicy with different greens and herbs they cook .Some of the popular among them are as follows:

Namsing

A very popular dish among Mising people. Namsing is nothing but dry and grounded fish is equally popular among other ethnic groups of Assam also.
